Sarouk carpets come from the Markazi province in northwestern Persia and are woven in the village of Saruk and the city of Arak, as well as in the surrounding countryside. The sarou style has since been adopted by other regions, as in the case of the Indian sarouks (also called Indo-sarouks).
Saroughs are made by hand on a vertical loom tied, using a cotton warp and weft. The weft consists of two or sometimes three threads. In carpets made before 1915, the weft was strongly pressed onto the knots, making the carpets particularly compact. The pile is made of very good quality wool and is cut short. However, the newer pieces seem to have a deeper pile. The Persian knot is used at a density of 160 to 400 knots per square inch.

Saroughs can be divided into two categories: rugs with traditional patterns and those intended for export, particularly to the United States. The traditional patterns usually consist of a central medallion pattern. This pattern is similar to the motifs used in the Kashans, but the different interpretations by the different craftsmen give the rugs a special character. Although they feature floral designs, these are executed in an angular shape, resulting in an unparalleled fusion of floral and geometric styles. Old and antique saroughs feature a central medallion as well as frequent use of the boteh pattern, which is a stylized leaf symbol in the shape of a leaf resembling the paisley pattern.
In contrast, the American Sarough (or Lilian) large floral sheaves radiating outward from a central, medallion-like floral form. It is so called because it was adapted for the American market from a pattern that originated in the village of Lilian; the true Lilian pattern has a central medallion in the shape of a spider, which is not the case with the American saroughs. The American saroughs use either rich rose-red tones with paler blues and pinks to emphasize the subjects, or, more rarely, rich pastels (usually pale blue, turquoise, or lemon yellow) used to create the same strong contrasts between subjects and to generate the field as in the American Kermans.
In all saroughs the border is simple, almost always consisting of two endpapers framing a broader central stripe, often decorated with Herati, while the first stripe often consists of traditional rosettes and collections of wavy lines.
